Skint Dad’s Lamb Rogan Josh Fakeaway

  • 1 tbsp vegetable oil
  • 1 finely chopped onion
  • 15g crushed ginger
  • 4 cloves crushed garlic
  • ½ tsp cinnamon
  • 2 tsp cumin
  • 2 tsp ground coriander
  • 1 tsp chilli flakes
  • 300g diced lamb
  • 400g tin of chopped tomatoes
  • 2 tbsp tomato puree
  • 150ml natural yoghurt
  • fresh mint
  1. Heat the oil in a large pan over a medium heat. Add the ginger, garlic, cinnamon, cumin, coriander and chilli flakes and fry for one minute.
  2. Add the onion and gently cook for 5 minutes until soft.
  3. Add the lamb and cook for a further 5 minutes making sure all the meat is browned.
  4. Mix in the tinned tomatoes and tomato puree.
  5. Reduce the heat, cover and simmer for 25 minutes.
  6. In the meantime, begin the cook the rice and mix the yoghurt (keeping one tbsp yoghurt back) with mint in a side bowl.
  7. Stir in one tbsp yoghurt before you dish up.
  8. Devour!
