Budget Recipe: Beef Stew with Dumplings
 
Ingredients
Beef Stew
  • 400g stewing beef, cut into chunks (£3.50, on offer for 2 for £7 or £4 each)
  • 50g plain flour (2p)
  • 1tbsp oil (2p)
  • 4 carrots, chopped (24p)
  • 2 onions, chopped (12p)
  • 100g mushrooms, sliced (21p)
  • 500g small potatoes, cut in half (35p)
  • 1 beef stock cube (2p) , dissolved in 600ml hot water
  • 1tbsp tomato puree (4p)
  • salt and pepper (1p)
£4.53 total - £1.13 each (plus lots of left overs)
Dumplings
  • 125g self-raising flour (4p)
  • 50g shredded suet (26p)
  • pinch of salt and pepper (1p)
  • 5tbsp cold water
31p or 8p for each dumpling
Instructions
In the Slow Cooker
  1. Coat the beef in the flour until it's all covered.
  2. Heat the oil in a pan and add the beef, cooking until browned.
  3. Once browned, remove the beef from the pan and keep aside.
  4. Using the same pan, add the carrots, onions and mushrooms, along with 100ml of the beef stock to coat the vegetables in the glaze from the meat juices.
  5. Cook until the onion starts to soften then add the beef, vegetables, potatoes, remainder of the stock, puree and salt and pepper to the slow cooker and give a small stir.
  6. Cook on low for 8 hours.
Dumplings
  1. Mix the flour, suet, salt, pepper and water in a bowl.
  2. Flour your hands and split the mixture into 4 balls.
  3. Place on top of the stew, recover and cook for 30 minutes.
In the Oven
  1. Coat the beef in the flour until it's all covered.
  2. Heat the oil in an oven proof dish and add the beef, cooking until browned.
  3. Once browned, add the carrots, onions and mushrooms, along with 100ml of the beef stock to coat the vegetables in the glaze from the meat juices.
  4. Cook until the onion starts to soften then add the potatoes, remainder of the stock, puree and salt and pepper.
  5. Cover with a lid then cook in the oven at 180C for 2 ½ hours.
  6. Make the dumplings as above, add to the stew then cook for 20 minutes.
Notes
We served it up with some cooked frozen peas (32p for 320g).
