We love a lamb kofta, but the ones we pick up from the supermarket have all sorts in them, so it’s much nicer (and just as easy) to make our own.
Using a few basic store cupboard ingredients, you can have these koftas prepared and cooked in less than 20 minutes.
So, if you’re planning to have a BBQ during the week then you know you won’t be having to wait ages to get eating.
One thing I never really want to do with lamb is over complicate things.
The meat is so delicious anyway that you don’t need to add a lot of extra ingredients to make it super tasty.
With just a few bits to bring out some flavour, these lamb koftas won’t disappoint.
What’s great too is that cooking with minced meat is a good budget cut, but we still get the great taste of lamb.
As an even better benefit, lamb is naturally rich in protein, low in sodium and provides seven vitamins and minerals that contribute towards good health and wellbeing.
So, as well as being good on your pocket (plus super tasty), its great to know that European lamb is good for your bones, muscles and brain function.
Skewers
It’s easy to just grab some metal or bamboo skewers to make koftas or kebabs, but we like to put a twist in ours which adds a boost of flavour.
Instead of using a normal skewer, we have a rosemary plant growing in the garden and use a stick of that as the skewer.
The flavour of the rosemary works it was through the meat. You don’t need much more to get a great taste.
Lamb kofta recipe
Ingredients
- 400g lamb mince
- 2 cloves of crushed garlic
- 1tsp cumin
- 8 springs of rosemary
Directions
- Add the lamb, crushed garlic and cumin in a bowl and mix together.
- Roll into 8 balls and flatten slightly.
- Wrap each of the koftas around a sprig of rosemary, making sure there is a stick left at either end.
- Brush with a little oil and cook on the BBQ for around 10 minutes, turning once or twice.
We usually serve ours with homemade pita bread and a couscous salad, along with a minty-yoghurt dip.
If you’re planning to use wooden skewers, be sure to soak them in water for 10 minutes before you use them. Also, be sure to chop some rosemary up instead and add it into the meat as you mix it, so you don’t lose the flavour.
Maybe you don’t have access to a BBQ, the weather has made a turn for the worse, or it’s the middle of winter and you fancy a delicious lamb kofta? That’s fine as you don’t just need to cook this outside.
These lamb koftas will cook beautifully under the grill.
Just prepare them the same and cook for around 15 minutes, turning occasionally.

They look delicious, will definitely give them a go. The recipe states thyme but in the photos I am sure rosemary (which I would use in this instance) is used?
