Quick Lunch: Pita Bread Pizza

We have been living off everything left in our cupboards, fridge and freezer this week (as Skint Dad accidentally took my bank card to the US with him!)

When I first thought that we wouldn’t have any money for a week I did panic slightly but, after having a proper look, I could see lots of meals and snacks that I could cook up which the kids would love.

I find lunches the hardest thing to prepare; we don’t need a full meal but need something big enough to keep the energy levels up until dinner time. It’s also hard finding something interesting that’s not the same as the day before and that the kids will enjoy.

When making a meal plan with our cupboard of food, the first thing I decided we must eat up was the food that had a short shelf life. We had a half eaten pack of pita bread which I was planning to eat with some hummus however, I was out of hummus (although I’ve since found a can of chickpeas in the back of the cupboard!)

With the pita bread, I decided to use them as a pizza base and get the girls to make their own mini pizzas.

It took a few minutes to prepare the ingredients and seconds to make the pita bread pizzas.

For each pita bread pizza, I used 1 teaspoon of tomato puree, a sprinkle of mixed herbs, some chopped ham and grated cheese.

They took no more than 10 minutes to cook under the grill and I took them out just as the cheese started to bubble.

We then had a lovely warm lunch that filled us all up until dinner time.

    Good idea! I’m moving house soon and have a red polka dot theme in the kitchen. I don’t suppose you know where you got that cutlery? It’s perfect!
