Skint Dad’s Banana Bread Recipe

It’s not often that we have ripe bananas in my house. However, bananas are Chloe’s favourite food, after raisins.

We go through so many of the things that I’m surprised she doesn’t look more like a monkey. Well, she does look a bit like a little monkey to me.

Pretty much every time we go to the shop, one of us always picks up some bananas. It works well as it keeps our stock levels up, and it avoids any type of terrible two’s tantrums in the event we have to say, “Sorry Chloe, you can’t have a banana right now!”

This plan normally worked quite well until last week, when Skint Mum and I both went to the shop separately but didn’t tell each other we were going.

We were both trying to be helpful, but with a little communication, one of us didn’t need to go. Unfortunately, this afternoon, we were left with a few overripe bananas.

Avoiding any food waste, which is a waste of my precious money and leaves another mark in the rubbish tip, I got my thinking cap on and whizzed up some Banana Bread.

Very easy recipe here. No need to sieve anything. Just the washing up is a chore.

Ingredients

200g plain flour
200g caster sugar
50g softened butter
1 egg
1 tsp vanilla extract
1 tsp baking powder
3 very ripe bananas

Banana Bread -ingredients

A few easy steps:

  1. Preheat oven to 180C and prepare a loaf tin by greasing it with a little butter.
  2. Mash the bananas in a bowl with a fork.
  3. Add flour, sugar, butter, vanilla extract, baking powder, and egg, mixing it all in well.
  4. Pour the mixture into the buttered loaf tin.Banana Bread into-tin
  5. Bake for about 50 to 60 minutes.

You can check to see if it’s cooked by putting a skewer into the centre of the cake. If it comes out clean, it’s done. Otherwise, pop it back in for a few minutes.

There are other quick and easy things to do with ripe bananas. We pop them into batter mix to make pancakes, throw them in a blender with some juice to make a smoothie or pop them into some custard for a yummy snack.

    Slice them and pop them in the freezer until frozen, whizz them up in a processor and add any flavourings (cocoa powder, nutella, honey) and it makes a nice soft type banana ice cream

    We have banana loaf at least twice a month. The bananas at Aldi and now Morrisons are 68p per kilo, so we sometimes have 2-3 left a week.

    Oh that looks so yum! I do have bananas on their last legs – unfortunately, I don’t have any of the other ingredients. You will have to save me a bit (please).
